Alkalising Recipe of the Week – Fennel, Broccoli and Leak Soup

Serves 4



1 tbsp olive oil

2 cloves garlic, finely chopped

1 fennel bulb, trimmed and finely sliced

1 leek, thinly sliced

1 large head of broccoli, cut into florets

1 litre vegetable stock

¼ cup fresh squeezed lemon juice

½ tsp ground coriander

Celtic sea salt and pepper to season

1 small handful parsley



Heat oil in a large pot, add garlic, fennel and leek and cook until soft.

Add broccoli, vegetable stock and lemon juice.

Season with coriander, sea salt and pepper.

Bring to the boil and simmer for 5 – 10 minutes or until broccoli is tender.

Once cooked, puree soup with a blender or food processor.

Divide between bowls and top with fresh parsley.
