Alkalising Recipe of the Week – Mexican style lettuce cups with fish

You will simply love this quick, fresh and healthy lunch (or dinner) as soon as you try it. Now that is it coming into summer it’s a great time to start cooking more fresh meals, this is a perfect recipe for an easy weekend lunch or addition to a bbq and you can whip it together in no time.

Serves 4

 

Ingredients

2 basa fillets or any white fish

1 lime, juiced

I bunch coriander

1 large chilli, finely chopped,

2 ripe tomatoes, diced

1 red onion, finely diced

1 large avocado, diced

1 pinch Celtic sea salt

1 cup watercress or alfalfa sprouts

 

Method

Poach fish in boiling water until opaque, remove and set aside.

Place all other ingredients (except lime) into a large bowl and mix well.

Flake fish into large bowl and then pour over lime juice.

Serve atop a large salad or in lettuce cups.

Garnish with fresh alfalfa sprouts or watercress.
