Alkalising Recipe of the Week – Raw Carrot Cake

 

Even though you are following an alkaline diet it does not mean that you have to skip dessert or that tempting snack. This divine raw carrot cake is the ideal solution to curb that craving, it tastes amazing and is packed full of raw nuts, carrots and spices.

Ingredients

Cake

1 cup Brazil nuts

1 cup Almonds

2 large carrots, grated

1 thumb ginger, grated

1 tsp cinnamon

1 cup goji berries

 

Icing                            

½ lemon, juiced

¾ cup cashews

1 tsp agave

 

Method

 

Line a spring form cake tin.

Blend all icing ingredients in food processor until smooth and creamy.

Place all cake ingredients except carrot and goji berries in food processor, blend until just combined.

Stir through carrot and goji berries.

Press into cake tin, cover with icing and sprinkle of coconut.

Place in fridge 1-2 hours.

Slice and serve.

  1. Great recipe! I added a tbsp of agave to the main mix to aid binding (I maybe didn’t process the nuts enough). Quick and easy, not much cleaning up. Worth a try!

    few of the pictures aren’t loading correctly. I’m not sure why but I think its a linking issue.
    I’ve tried it in two different web browsers and both show the same results.
