Alkalising Recipe of the Week – Roasted tomato and avocado breakfast
Need some inspiration in the alkaline breakfast department? Well you’re not alone! Try these stuffed roasted tomatoes, they are the ideal solution to create a little bit of variety to the start of your day, plus they are alkaline. The fresh and easily digested ingredients will leave you feeling energised and ready to take on the day.
2 large tomatoes
1 ripe avocado
2 tbsp basil, chopped
½ cup sprouts
1 tsp lime
1 tsp paprika
Pinch Celtic sea salt
1 tbsp spring onion, finely sliced
1 tsp barley or wheat grass (optional)
Cut tops off tomatoes and hollow out.
Roast tomatoes at 180c for 15 minutes.
Mash avocado in a bowl with basil, paprika, salt, lime and barley or wheat grass until combined.
Fill tomatoes with avocado mixture and top with sprouts and spring onion.
