Gluten Free Recipe of the Week – Fruity Quinoa Breakfast Slice

Try this delicious and nutritious breakfast slice for the perfect start to your day. Perfect for a weekend breakfast (when you have a little more time to wait for it to bake in the oven.)

 

2 cups Rolled quinoa flakes

2 bananas (mashed)

2 green apples (grated, with the skin on)

1/4 cup dried goji berries

1 cup blueberries (frozen or fresh)

3 tablespoons apple sauce

2 eggs (beaten)

2 tablespoons chia seeds

 

Preheat oven to 180 degrees Celsius, then line a n0n-stick baking tray with baking paper.

Mix all ingredients in a bowl until well combined

Press mixture into prepared tray.

Bake for 25 – 30 minutes or until the slice is golden brown and firm to touch.

Allow to cool slightly then cut into squares to serve.

Serve with fresh fruit, a dollop or natural yoghurt and a drizzle of honey (if you prefer a sweeter taste).
