Gluten Free Recipe of the Week – High Protein Super Berry Muffins

These gluten free goodies are simply divine. You can enjoy them for breakfast on the go or a quick in between meal snack. Adding the soy protein makes them higher in protein than regular muffins, which helps to keep you feeling full for longer.  Plus with all the super berries added you will be giving your body a good hit of protective antioxidants.

 

1 cup buckwheat flour

½ cup Morlife Soy Protein Isolate

½ cup ground almonds

½ cup shredded coconut

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

1 green apple, grated

1 cup Morlife Dried Blueberries

1/3 cup Morlife Goji berries

¼ cup coconut oil (ensure room temperature so liquid)

½ cup Soy milk/rice milk/nut milk

2 eggs

3 tablespoons Agave nectar

1 teaspoon vanilla

 

Preheat oven to 180°degrees

Brush a muffin tin with oil

In a bowl mix together buckwheat flour, soy protein, ground almonds, coconut, baking powder and spices.

In a separate bowl whisk together eggs, milk, coconut oil, agave and vanilla

Stir all wet ingredients into dry ingredients until well combined

Gently stir apple, blueberries and goji berries through mix

Spoon mixture into muffin tray

Cook for 30 – 40 minutes until muffins spring back when touched

Cool on a rack, then enjoy
