Anti-Aging recipe of the week: Berry-delicious Tartlets

Berry tartlets

serves 6-8

Ingredients

crust

1 cup raw unsalted almonds

3/4 cup pitted dates

1/4 cup coconut flakes

1 tsp tahini

pinch of salt

filling

1 cup green tea (I like Morlife Green Antiox tea, it has a sweeter flavour)

½ cup dried Blueberries

½ cup dried Goji berries

1-2 Tbsp Chia seeds

1 Tbsp fresh lemon juice

3 tsp Coconut shreds

Method

Soak the berries in the tea for approximately 1-2 hours or until slightly rehydrated.

Place the almonds in a food processor and blend until they become a coarse crumble, but no large bits left. Add the coconut and salt, dates and tahini until the dough pulls together into one mass.

Press the almond mixture into mini tartlet or muffin tins. Place the crust in the fridge for at least 30 minutes. You can also make the day before.

Remove half of the liquid from the soaking berries and stir through the lemon juice and the chia seeds.

Remove crust from the fridge and pour the mixture into the crust and sprinkle with shredded coconut. Place tart in the fridge for another 30 minutes or so. You can serve as they are or top with sliced banana and a drizzle of honey.
