Avocado, Antioxidant Berries and Grilled prawns Salad
Here’s a delicious salad bursting with colour, flavour and antioxidants! Yummm!
Ingredients (Serves 4)
100g fresh blueberries50g Goji berries (I always use Morlife’s Plain Goji Berries)
2 ripe avocados, sliced100g fresh raspberries
500g of fresh salad mix
1 red onion, thinly sliced
50g pine nuts
350g prawns, peeled
2 cloves garlic, chopped
2 tbsp balsamic vinegar
15ml olive oil
1 teaspoon Dijon mustard
½ teaspoon honey
Salt and pepper to taste
- To make salad dressing, blend 20g of fresh blueberries, 20g of raspberries, vinegar, honey and Dijon mustard until smooth, gradually adding in ½ the amount of olive oil prepared.
- To grill prawns, pre-heat grill pan over high heat. Mix peeled prawns with chopped garlic, remaining olive oil and your desired amount of salt and pepper. Grill prawns in the pan for about 3-4 mins or until it turns golden brown. Remove from pan and allow to cool.
- Toss all the amazing antioxidant berries, avocado slices, salad leaves, pine nuts and grilled prawns into salad bowl and gently mix well.
- Serve salad with berry dressing on the side.
