Baked Salmon with Cranberry and Mango Guacamole

Guacamole
1 medium mango
1 medium avocado
½ cup Morlife dried cranberries
1 small white onion, diced
1 cup coriander, chopped
½ cup fresh chives, chopped
1 lime, juiced
Pinch Celtic sea salt
Add all the ingredients into a medium sized bowl. Toss together and then refrigerate until ready to serve.

Baked Salmon
680g salmon fillet
½ lemon, juiced
2 tbsp extra virgin olive oil
1/3 tsp paprika
½ tsp Celtic sea salt

Method
Preheat oven to 180C.
Place salmon skin side down, in oiled glass baking dish. Brush generously with oil and squeeze on lemon juice. Sprinkle with paprika and salt. Bake for 10-15 minutes or until cooked through. Serve with mango salsa heaped on top.
