Creamy bean salad

Combining all those tasty foods from this weeks Aging blog to bring you a delicious Creamy Bean Salad. Including the super food KALE a rich source of vitamin A, iron and a plethora of nutritional goodness.

Ingredients

Salad

4 stalks Kale, cut fine

1 cup grated Green papaya

1 cup lightly steamed Broccoli

1 cup spinach

1 cup cherry tomatoes

½ cup cannellini beans

1 tbsp Pepitas

1 tbsp Chia seeds

Dressing

1 large ripe Avocado or 2 small

2-4 tbsp Olive oil

Pinch salt and pepper

1 tsp Tahini

1 tbsp lemon juice

Method

To make the dressing place all the ingredients into a food processor and process until smooth. Season to taste.

To make the salad place all ingredients into a large bowl and toss together and drizzle dressing over top.
