Goji Banana Chia Seed Super Pudding
Here is a nutritious, delicious meal packed with Omega-3 and antioxidants your body needs and will love! Chia seeds and goji berries are superfoods bursting with nutrients and superior over many other ordinary fruits and seeds found on the market. These functional foods are a great super snack that can be enjoyed anytime, anywhere! Enjoy this delightful goji banana chia seed as an energizing breakfast meal or a great alternative to dessert.
Ingredients (Serves 2)
1 chopped banana
3 tbsp chia seeds, I like to use Morlife’s chia seeds
1 cup light coconut milk (or almond milk)
Pinch of cinnamon
1 teaspoon stevia extract powder or add to taste
2 tbsp dried goji berries, I like to use Morlife’s goji berries
1. Mash banana in a bowl. Add chia seeds, coconut milk, cinnamon and stevia extract. Ensure ingredients are well mixed together. Leave to stand for 15 minutes.
2. Mix ingredients again and spoon the mix into 2 separate glass bowls. Allow to set overnight in the fridge.
3. Next day, your chia pudding is ready. Sprinkle superfood dried goji berries and your favourite berries if you’d like. Be creative! Serve chilled.
