Healthy Child friendly Recipe Idea

Children love beans, they are bland, slightly sweet and fun to eat. So next time your child puts their nose up at a bowl of porridge try this recipe. This recipe is also a great snack, lunch or dinner served with a baked potato and salad.
Beans and Greens Breakfast
Serves 2
Ingredients
200g cooked haricot or navy beans
4 spring onions, sliced
1 tomato, diced
1 handful of basil
2 handfuls of spinach
1 clove garlic, minced
1 avocado
½ lemon
Extra virgin olive oil
Celtic sea salt & black pepper
Method
Bring a little water to the boil and ‘steam fry’ the garlic for one minute. Toss in the tomato, haricot beans and spring onions until everything softens.
Next add the basil and spinach until it is wilted and season with Himalayan salt and black pepper.
While this is cooking prepare a side salad and halve the avocado. Top with salt and pepper.
