Dill and Fennel Seed Crusted Fish and Grapefruit and Celery Salad


4 x180g fish steaks

2 tsp olive oil

Seasoned Salt
1 tbs salt
Grated zest of 1 lemon
2 tbs chopped dill

1 tsp fennel seeds

 Grapefruit and Celery Salad
2 sticks celery, thinly sliced
1 large ruby grapefruit, segmented
1 tbs dill sprigs

2 tbs olive oil

1. Preheat oven to 180C.

2. To make seasoned salt, pound all ingredients in a pestle and mortar to combine. Place mixture on an oven tray lined with baking paper. Cook for 15 minutes or until dried out. Cool completely. Pound again to make a fine salt.

3. To make salad, combined all ingredients in a bowl. Season.red cover

4. Brush fish all over with oil and sprinkle one side with salt mixture.

5. Heat a non-stick frying pan over medium-high heat. Cook fish for 2 minutes on each side.
