Immune Boosting Recipe Idea Good Old Chicken Soup
1 900g whole chicken, cut into 4 and trimmed of excess fat
1 onion, finely diced
1 carrot, finely chopped
1 stalk celery, finely chopped
2 garlic cloves, finely diced
2 tbsp fresh parsley, finely chopped
6 sprigs fresh thyme
2 tsp fresh oregano
Celtic Sea salt and pepper
1/4 cup extra parsley (for serving)
In a large saucepan combine the chicken, onion, carrot, celery, garlic, parsley, herbs, water and peppercorns and bring to the boil over a medium-high heat. Reduce the heat to low and cook, covered, for 40 minutes or until vegetables are very tender and chicken is cooked through.
Use tongs to transfer the chicken pieces to a clean work surface. Cut the chicken meat from the bones. Discard bones and finely chop the chicken and add back to the soup.
Season to taste. Sprinkle with extra parsley and serve immediately.
