Seaweed and Cucumber Salad

Antioxidants are not only found in super berries but also in some of our favourite green veggies, like avocado and cucumber. Take a look at our latest recipe for a great summer salad with both antioxidant and detoxifying properties you will love!

Ingredients

1 Cucumber, sliced

1 cup soaked Arame or Wakame seaweed

1 Avocado, chopped

2 tbsp dried Cranberries

2 tbsp Chives, sliced

2 tbsp extra virgin Olive oil

Wakame seaweed is a type of seaweed or kelp commonly found in Japanese, Korean and Chinese cuisines. It not only tastes amazing but is also highly nutritious! Wakeme seaweed contains alkalising minerals magnesium, calcium as well as iron which is needed for red blood cell production. This green seaweed is also a good source of vitamins C and E with antioxidant and anti-inflammatory properties that positively benefits our body.

1 tbsp Sesame seeds (optional)

2 tbsp Lemon juice, freshly squeezed

Himalayan salt, add to taste

Black pepper powder, add to taste

 

 

Method

  1. Soak your choice of seaweed in a bowl of warm water between 10 to 15mins. This will cause the seaweed to swell and became a glossy green colour. Quickly plunge seaweed into hot boiling water 30secs to 1min remove and immediately run under cold water.
  2. Toss all ingredients together, mix well and indulge.
